Sweet Potato Casserole

Now this is the perfect side dish to go with ANY meal. It’s sweet, healthy (somewhat) and tastes oh so delicious! I have made it once before and it turned out amazing. This is the second time around, and it seems to taste even better than before. I don’t remember where I got the recipe from, but here it is for you guys to try. It takes about an hour for the potatoes to bake, but after that it only takes 5 minutes to prepare and about 15-20 minutes to cook.


  • 6 medium sweet potatoes (about 2 lbs.)
  • 2 eggs
  • 2 tbsp. barley malt syrup
  • 2 tbsp. softened margarine or butter
  • Pinch of salt
  • 1 tbsp. cinnamon
  • 1 cup orange juice
  • 2 tbsp. honey
  • ½ cup pecan halves


  1. Preheat oven to 425°F.
  2. Bake sweet potatoes until tender, about 45-60 minutes. Remove and discard skin.
  3. Reduce oven to 375°F.
  4. Mash Potatoes & beat eggs, syrup, 1 tbsp. margarine, salt & cinnamon. Add enough orange juice to moisten and make fluffy.
  5. Spoon into a 1 ½ qt. baking dish and drizzle with honey and remaining 1 tbsp. margarine. Sprinkle with pecans and bake for 20 minutes. Serve warm.

NOTE: I only had three potatoes, so I used half of the amount of ingredients.
